Halloween Crimson Beet Shrub Soda for Kids

This Crimson Beet Shrub Soda is a tart-sweet, naturally ruby Halloween drink for children. Bottled beet juice supplies the color, pear nectar softens its earthiness, and a small amount of apple cider vinegar gives the drink a gentle shrub tang before sparkling water adds bubbles.

How to make it

How we test recipes

  1. Chill the beet juice, pear nectar, sparkling water, pitcher and six tumblers for at least 2 hours.
  2. An adult cuts six simple 2-inch bats from clean black paper and sets them aside with six miniature clothespins.
  3. Measure the chilled beet juice and pour it into the chilled pitcher.
  4. Measure the chilled pear nectar, add it to the pitcher and stir for 10 seconds.
  5. Measure the apple cider vinegar, pour it into the beet-and-pear mixture and stir for another 10 seconds.
  6. Just before serving, measure the chilled sparkling water and pour it slowly down the inside of the pitcher to preserve the bubbles.
  7. Stir the mixture once from bottom to top with a long spoon; do not whisk or stir repeatedly.
  8. Divide the drink evenly among the six chilled 8 oz tumblers, leaving at least 1/2 inch of space at each rim.
  9. Clip one paper bat to the outside wall of each tumbler below the rim. Make sure no paper or clothespin touches the drink.
  10. Serve immediately while fizzy. An adult removes every paper bat and clothespin before washing or recycling the tumblers.

Keep the flavor bright and gentle

Use bottled 100% beet juice, not pickled-beet liquid, and pear nectar rather than thin pear juice. The measured vinegar should add a mild fruity tang, not make the drink taste like salad dressing. Pour the sparkling water last and stir only once so the glasses retain their fine bubbles.

This drink contains no alcohol, extracts or bitters. For a different fizzy Halloween option, see the Color-Changing Butterfly Pea Lemonade. The adult companion is the Graveyard Irish Coffee. Browse Halloween drinks for kids.

The estimate counts the beet juice, pear nectar and apple cider vinegar. Sparkling water adds no calories. Paper bats and clothespins are non-edible serving supplies, and no pulp is strained or discarded. The drink is 0.0% ABV.
