Halloween Pumpkin Oloroso Sherry Cobbler

This Pumpkin Oloroso Sherry Cobbler is a lower-strength Halloween cocktail with nutty fortified wine, maple, pumpkin and warm spice. It is shaken rather than blended, poured over crushed ice and finished with a simple jack-o'-lantern face cut from orange peel.

How we test recipes

  1. Put one 10–12 oz double rocks glass per serving in the freezer for 5 minutes. Keep the Oloroso sherry refrigerated.
  2. For each serving, cut one wide orange peel on a cutting board. With the peel lying flat and the colored side facing down, use the tip of a small paring knife to cut out two triangular eyes and a short jagged mouth. Set the peel aside.
  3. Measure each serving's chilled Oloroso sherry into a cocktail shaker.
  4. Add each serving's measured maple syrup to the shaker.
  5. Add each serving's measured pumpkin puree.
  6. Add each serving's measured lemon juice and pumpkin pie spice.
  7. Seal the shaker without ice and shake firmly for 10 seconds so the pumpkin and maple disperse through the sherry.
  8. Add the measured ice cubes, reseal and shake for 12 seconds, until the shaker feels cold.
  9. Remove the glass or glasses from the freezer. Fill each with its share of crushed ice, then strain one serving of the cocktail into each glass. No pumpkin pulp is intentionally discarded.
  10. Rest one prepared orange peel on top of each drink with the cut face visible. Serve immediately and remove the peel before drinking.

Choose the sherry and control the sweetness

Use a dry or medium-dry Oloroso sherry near 17% ABV, not a sweet cream sherry. Its nutty, oxidative flavor works with pumpkin without needing a full-strength base spirit. Check the bottle: styles and strength vary, and the displayed estimate uses the exact 17% value listed in the recipe.

Pure pumpkin puree means cooked pumpkin with no sugar or pie filling added. If the drink tastes too sweet for your bottle of sherry, reduce the maple syrup to 1/4 oz; the calorie panel is calculated from the full 1/2 oz.

The estimate counts the sherry, maple syrup, pumpkin puree, lemon juice and pumpkin pie spice. Ice adds no calories, no pulp is deliberately discarded, and the orange peel garnish is excluded. Brand and sherry-style differences will change the result.
