Vanilla vodka, pineapple and orange make the fruity base; fresh lemon keeps it from tasting flat. Grenadine settles toward the bottom for a deeper orange-red gradient, while a measured spoonful of whipped cream supplies the white top.

How to make it

  1. Chill a coupe or martini glass.
  2. Add the vanilla vodka, pineapple juice, orange juice and lemon juice to a shaker filled with ice. Shake firmly for 12 to 15 seconds.
  3. Double-strain into the chilled glass. Slowly pour the grenadine down the inside wall of the glass. Let it settle for 20 to 30 seconds; do not stir if you want to keep the color gradient.
  4. Spoon 1 tablespoon whipped cream gently onto the surface.
  5. Thread three room-temperature candy corn pieces onto a thin pick through their wide yellow ends. Work slowly and keep spare pieces nearby in case one splits. Rest the pick securely across the rim and serve immediately.

Recipe notes

Vanilla vodka and grenadine vary in sweetness. Taste the shaken base before adding grenadine: shake again with another 1/4 oz lemon juice if too sweet, or 1 teaspoon pineapple juice if too sharp.

The colors are meant to blend softly rather than form rigid stripes. A true three-layer drink would require much more sugar and cream, so this version keeps the visual theme without turning the whole glass into dessert.

Adjusting the balance

Vanilla vodkas and grenadines differ in sweetness. Taste the shaken base before adding the grenadine. If it is too sweet, shake it again with another 1/4 oz lemon juice. If it is too sharp, add 1 teaspoon pineapple juice. Keep the grenadine at 1/4 oz on the first test; more will quickly dominate both the color and flavor.

Preparing it for a party

Combine the vodka and three juices up to four hours ahead and refrigerate. Measure 3 3/4 oz of that mixture per drink, shake each serving with ice, then add the grenadine, whipped cream and garnish individually.
