Halloween Full Moon Gin Flip
This Full Moon Gin Flip is a rich Halloween cocktail rather than another fruit sour or fizzy highball. London dry gin, maple, cream and a pasteurized whole egg are shaken into a smooth drink with a dense foam cap. A simple parchment stencil turns grated nutmeg into a crescent moon.

How to make it
- Chill one coupe per serving in the freezer for 5 minutes. Keep the pasteurized egg and cream refrigerated until measured.
- Fold a clean 3-inch square of parchment paper in half. Cut out a simple 1-inch crescent, unfold the paper and set the stencil aside.
- Crack the measured pasteurized egg into a small clean bowl. Check that no shell is present, then pour the egg into an empty cocktail shaker.
- Measure the gin and add it to the shaker.
- Measure the cold heavy cream and maple syrup, then add both to the shaker.
- Seal the shaker without ice and shake hard for 20 seconds to combine the egg and build foam.
- Open the shaker, add the measured ice cubes, reseal and shake hard for 15 seconds, until the shaker is very cold.
- Remove the coupe or coupes from the freezer. Fine-strain one serving into each glass, holding back ice chips and any egg strands.
- Hold the parchment stencil about 1/2 inch above the center of the foam. Grate each serving's measured nutmeg lightly over the opening, then lift the stencil straight up.
- Serve immediately. Discard the used stencil, ice and anything caught by the fine strainer; do not store a finished flip for later.

Build stable foam safely
Use a refrigerated pasteurized shell egg, not an unpasteurized raw egg. The first shake without ice disperses the egg; the second chills and dilutes the cocktail. Fine-straining gives the stencil a smoother surface. If the foam is not level, wait 20 seconds before adding the nutmeg.
The 40% gin value is used for the displayed strength estimate. Different gin proof, egg size and cream brands will change the result. For a lighter wine-based option, see the Pumpkin Oloroso Sherry Cobbler. The alcohol-free companion is the Purple Monster Blue Corn Atole. Browse Halloween cocktails.
The estimate counts the gin, pasteurized egg, cream, maple syrup and nutmeg. It excludes ice and the parchment stencil. Melted ice and material caught by the fine strainer are not assigned calories separately.
