This New Year's Passion Fruit Confetti Fizz for Kids uses edible passion fruit seeds as its natural “confetti.” The golden drink is completely alcohol-free, with no extracts, bitters, artificial color or edible glitter.

How to make it
- Cut one small star per serving from clean gold paper and attach each star to a small clip; keep the decorations away from the ingredients.
- Measure the honey into a heat-safe small bowl.
- Measure the hot water, pour it over the honey and stir for 20 seconds, until completely dissolved.
- Put the honey syrup in the refrigerator for 10 minutes, until cool; do not add hot syrup to the fizzy drink.
- Cut ripe passion fruits in half, scoop the pulp and seeds into a second bowl and weigh 120 g.
- Divide the ice cubes evenly among the glasses, using one glass per serving.
- Divide the passion fruit pulp evenly over the ice, including the edible seeds that create the confetti effect.
- Divide the cooled honey syrup evenly among the glasses.
- Slowly divide the chilled sparkling water among the glasses, then stir each drink once from the bottom to lift the pulp without losing too much fizz.
- Clip one paper star to the outside rim of each glass, confirm the paper does not touch the drink and serve immediately.

Passion fruit varies widely in tartness. Taste the pulp before assembling the drinks. If it is very sharp, dissolve one additional teaspoon of honey per serving in a little hot water, cool that syrup completely and add it before the sparkling water.
