Christmas Pomegranate-Rosemary Tequila Sour
Shake 45 ml blanco tequila, 30 ml pomegranate juice, 15 ml lemon juice, 15 ml simple syrup and 22 ml pasteurized egg white. Makes one ruby-red Christmas cocktail in about 7 minutes, estimated 180 kcal and 14% ABV before ice dilution.
This Christmas Pomegranate-Rosemary Tequila Sour combines earthy blanco tequila with tart pomegranate and fresh lemon. A pasteurized egg white creates the pale, soft foam; a rosemary sprig and orange twist give the glass a festive fragrance without needing to cook a flavored syrup. It is a shaken sour, not a sparkling wine cocktail.
Includes chilling, dry shaking and ice shaking; not a cooked drink.

How to make it
- Wash the orange, if garnishing, and cut a thin strip of peel without much white pith. Rinse the rosemary and set aside with the optional pomegranate arils.
- Chill a coupe glass in the freezer or with ice water, then empty it.
- Measure the tequila, chilled pomegranate juice, freshly squeezed lemon juice, simple syrup and pasteurized egg white into a shaker without ice.
- Seal and dry-shake firmly for 15 seconds to begin forming foam.
- Add approximately 1 cup of ice cubes to the shaker, reseal and shake for 12–15 seconds until cold.
- Double-strain into the empty chilled coupe, leaving the shaker ice behind. Allow the foam to settle for a few seconds.
- If using them, rest the rosemary sprig at the rim, express the orange peel above the drink and add the pomegranate arils carefully to the foam. Serve immediately.
Recipe notes
Use pasteurized egg white suitable for uncooked cocktails; keep chilled and serve promptly. Estimated 180 kcal and approximately 14% ABV before ice dilution, using 40% ABV tequila and typical juice/syrup values; rosemary, arils, orange peel and discarded ice excluded. Flavor and estimates require owner testing.

How should it taste?
Expect a tart, juicy pomegranate opening followed by tequila and lemon. Simple syrup softens the acidity; the rosemary adds an herbal aroma mainly when the glass is lifted. For a sharper cocktail reduce the syrup to 1/4 oz (7.5 ml). For a sweeter one, add 1/4 oz (7.5 ml) more syrup; that changes the nutrition estimate.
Can I make it without egg?
Yes. Omit the egg white for a clear, less foamy drink. If you want a vegan foam, try a commercially prepared cocktail foamer and follow its label, but test it separately: the quantity and nutritional estimate will be different.
Make-ahead and serving notes
Measure and refrigerate the tequila, pomegranate juice, lemon juice and simple syrup together shortly before guests arrive. Add the pasteurized egg white only when making each drink, then shake and serve immediately. Do not shake carbonated ingredients in a sealed shaker.
The estimated 180 kcal includes the liquid ingredients, using 40% ABV tequila and typical juice/syrup values; garnishes and discarded ice are excluded. The estimated 14% ABV is calculated before dilution, and the actual served strength falls after shaking with ice. This recipe is editorially drafted and has not yet been taste-tested by the owner.
