How to make it
- Measure the milk into a small saucepan. Before heating, whisk in the unsweetened cocoa powder until there are no dry clumps.
- Add the measured 2 teaspoons caramel sauce and 1 teaspoon maple syrup. Whisk again so both sweeteners are evenly dispersed.
- Stir in the ground cinnamon, ground ginger and tiny pinch of salt.
- Warm over low to medium-low heat for 4–5 minutes, whisking frequently, until steaming and smooth. Do not boil.
- Remove from the heat, taste with a clean spoon and allow the cocoa to cool to a comfortable drinking temperature for the child.
- Pour into a heat-safe mug. If desired, spoon 2 tablespoons whipped cream on top and add a light additional drizzle of caramel sauce (not included in the base estimate).
- If using the gingerbread star, rest it on the rim or serve alongside. Add a cinnamon stick only as an adult-supervised decoration, then remove it before serving to younger children.

How sweet is this cocoa?
The base recipe uses just 2 teaspoons of caramel and 1 teaspoon of maple syrup for the entire mug, so it is less sweet than many cocoa mixes. Taste it before adding extra syrup. Use plain unsweetened cocoa rather than pre-sweetened hot chocolate powder; otherwise the result and calories will change.
For a dairy-free variation, swap in 1 cup (240 ml) of unsweetened oat milk and check the other toppings for dairy. It will be lighter-bodied, so start with the same cocoa and sweetener amounts and taste before serving.
Can I prepare it ahead for a holiday party?
You can combine the cold milk, cocoa, sauce, syrup and spices in advance, refrigerate promptly, and heat individual mugs when needed. Make the whipped-cream topping fresh, rather than storing a topped mug.
