A pomegranate Champagne cocktail brings color to a New Year's toast without making you run a shaker at midnight. Chill everything first and pour the sparkling wine last. Any dry sparkling wine works; use Champagne if you want Champagne specifically.

Ingredients

  • 1 oz chilled pomegranate juice
  • 1/4 oz fresh lemon juice
  • 1/4 oz simple syrup, optional
  • 4 oz chilled dry Champagne or other sparkling wine
  • Lemon twist or a teaspoon of pomegranate arils for garnish

How to make it

  1. Put the pomegranate and lemon juices in a chilled flute or coupe. Taste and add syrup if your juice is especially tart.
  2. Slowly add sparkling wine; pause if the foam rises. Stir very gently once.
  3. Add a lemon twist or a few pomegranate arils and serve immediately.

For a party, combine the juices in advance and refrigerate, then measure about 1 1/4 oz into each glass. Pour the sparkling wine as guests pick up their drinks. For a zero-proof toast, choose nonalcoholic sparkling wine or chilled sparkling water instead. If you prefer citrus, try Prosecco and orange juice.
